
I didn't grow up eating sweet potatoes and on the rare occasions that I have had them I haven't really liked them. I think it's the combination of the texture and the sweetness that just doesn't do it for me. Well a few weeks ago I came across a recipe that claimed to be the best sweet potatoes so I thought I'd give it a try. You cut the sweet potatoes into really thin slices, toss them with olive oil and sea salt, and bake them in the oven. Then you serve them with this dip which is SO GOOD (and I'm pretty sure not at all good for you!) and they make the sweet potatoes really good. We've made them twice now and the second time I liked them even more than the first. So maybe I might like sweet potatoes after all... :)
Here's the recipe:
2 medium sweet potatoes, peeled
1 T olive oil
1/4 t sea salt
Dip:
3 oz reduced fat cream cheese
3 T reduced fat sour cream
2 t finely chopped green onion (I didn't have any of this on hand so I omitted it)
2 finely chopped seeded jalapeno pepper
Cut potatoes into 1/8 inch slices. (the thinner the slices the better--in my opinion) Place in a large bowl and drizzle with olive oil. Sprinkle with salt and toss to coat.
Arrange in a single layer on two ungreased baking sheets. Bake at 375 degrees for 25-30 minutes or until golden brown, turning once.
In a small bowl, beat dip ingredients. Serve with potatoes. Enjoy!

That is so funny, I actually had never had a sweet potatoe in my life until I moved to MN after I got married. I realized, a little butter and fresh ground pepper turns them into such a comfort food for me. I love them now, and buy them all the time!
